RECIPE CORNER | BAKED GARLIC PARMESAN POTATO WEDGES (PINTEREST FIND)

One of the foods on this Earth that I probably couldn't live with out are potatoes!!  They can be dressed up, dressed down, whipped, chopped, wedged, etc into so many different dishes!  While doing my daily Pinterest rounds, I came across this recipe + thought "It sounds fairly simple to make + oh, so delicious, let me give it a try!!"
This recipe comes from Creme de la Crumb, which I am totally subscribing too, that's a beautifully designed food blog packed with tons of tasty recipes! GOSH, where would I be without Pinterest? When I tell you these potatoes are SOOO yummy, please believe it! I also like the fact that there aren't hundreds of ingredients to use. Very quick + easy to make, which I appreciate!
Here's the ingredients list + instructions! (taken from Creme de la Crumb)

INGREDIENTS
3-4 large russet potatoes, sliced into wedges
4 tablespoons olive oil
2 teaspoons salt
2 teaspoons garlic powder
2 teaspoons Italian seasoning
½ cup shredded Parmesan cheese
optional: fresh parsley (or cilantro), ranch or blue cheese dressing for dipping


INSTRUCTIONS

Preheat oven to 375. Lightly grease a large baking sheet and set aside.
Place potato wedges in a large bowl. Drizzle with olive oil and toss to coat. In a small bowl whisk together salt, garlic powder, and Italian seasoning. Sprinkle potato wedges with the shredded cheese, tossing to coat, then sprinkle with the seasoning mixture.
Place potato wedges on prepared baking sheet in a single layer with skin-sides-down. Bake for 25-35 minutes until potatoes are fork-tender and golden. Sprinkle with freshly chopped parsley and dressing for dipping.

So of course, I had to double everything because of the appetites of my growing 15 y.o. son + husband, but I didn't double the seasonings!  As a matter of fact, I actually used less salt because the Italian seasoning was good enough.  I also didn't use fresh parsley because I didn't have any + this was spur of the moment.  They taste AMAZING!!!!!  My daughter + I used ranch while my hubby used blue cheese dressings (the dressing war in my household) + my son, oddly enough, used ketchup (okay crazy child).  I was shocked because my husband normally doesn't take well to new recipes (creature of habit like myself), but he absolutely LOVED these!  All around hit with all of the tastes buds in my house!
I actually made 2 sheets of these :)
