RECIPE CORNER | CRAB SALAD (PINTEREST FIND)


Hi guys!  Today hasn't been a great day.  I picked up a nasty germ from my husband so now I'm home-ridden (yay for not having to go to work, nay for not being able to workout).  Sounds great BUT the kiddies are out of school this week also, so I still have to be a mommy while sick (at least until hubby gets home from work).

Yesterday, I whipped up some delicious crab salad and I felt as if I should tell you guys about it.  I originally found a similar recipe online (completely forgot where, sorry *sad face*), but I kinda tweaked it to my taste. 
what you'll need:

8 oz. crab meat (I used Spartan Fresh Selections imitation crab from the grocers)
2 tbs. sour cream (you may substitute sour cream with greek yogurt)
3 tbs. mayonnaise (I used Miracle Whip because I really don't like Mayo)
celery (I used a half stalk)
green onions (I used 3 stems)
2 eggs (I used only the whites)
if you need seasoning, just a sprinkle of salt

While you hard boil the eggs, in a bowl, combine crab meat, mayo and sour cream.  Finely chop celery and green onions and add to the crab.  Once the eggs are done and cooled, remove the yolk and chop up whites and add to the crab.  Season with salt, if desired and ENJOY!
Very easy, quick to make and YUMMY!  I usually eat mine with Wheat Thin crackers and it's delish!  You can also add shrimp to the crab (I've done this, but prefer it with just crab).
